Jerk chicken is a spicy grilled-meat meal that originated in Jamaica but is now popular across the Caribbean. Jerk refers to a method of cooking in which the primary component is seasoned and cooked slowly over a fire or grill made of green pimento wood positioned over hot coals; the resultant smoke is essential to the dish's flavour.
