Callaloo is the young leaf of two distinct plants, the taro plant and Chinese spinach. Callaloo resembles spinach in appearance and is used in similar ways: it is excellent as filling for quiches, pancakes and omelettes or in soups. It has also given its name to the most famous of Caribbean soups.
